Recipes: Forty-Niner Flapjacks

Forty-Niner Flapjacks

Ingredients:

  • 2 cups sour milk (regular milk can be used)
  • 1 cup cornmeal
  • 2 tablespoons flour
  • 1 egg
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • Water as needed
Directions:
This is a very old recipe from the California Gold Rush days. These flapjacks were very popular in the gold camps.

1. Mix the milk, cornmeal, flour and egg together.
2. Add the baking soda and salt, then mix. Add a little water if needed (if it looks too dry).
3. Drop dough (like pancakes) onto a greased skillet (medium heat).
4. When bubbles appear and the bottom of the flapjacks are browned, turn and cook until the other side is brown. Turn only once!

I havent made this recipe but if youre looking for the impossible-to-find Original Pancake House recipe for 49er's I can tell from the ingredients that this recipe isnt even close. Food Network had an OPH clip in which mgmt said they make a batch of sourdough batter that goes into the 49er batter. That's all they would say. I tried emailing the company for the recipe and was told its a secret.

Who are you kidding? I tried this excuse for a recipe and could not believe how bad it was. Maybe it should be (1) cup milk instead?? It was like a bowl of watery mush. This recipe did not come close to any kind of pancake I have ever seen in my entire long breakfast eating life.

Yes, I guess I should note that I tried this and it sucked. I have looking for the Original Pancake House recipe with no luck.

Now, what I can say is this: I used a box recipe, a buttermilk one, and water it down and keep it thin and mix in a little syrup into the batter and get something really close to the 49ers at the Original.
