Chewy Chocolate-Cherry Cookies
Yield: 30 servings
Ingredients:
- 1 cup all-purpose flour (about 4-1/2 ounces)
- 1/3 cup unsweetened cocoa
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup sugar
- 1/3 cup butter, softened
- 1 teaspoon vanilla extract
- 1 large egg
- 2/3 cup dried tart cherries
- 3 tablespoons semisweet chocolate chips
- Cooking spray
Directions:
- Preheat the oven to 350°F.
- Lightly spoon the flour into a dry measuring cup and level with a knife.
- Combine the flour, cocoa, baking powder, baking soda, and salt, stirring with a whisk.
- Place the sugar and the butter in a large bowl and beat with a mixer at high speed until well blended.
- Add the vanilla and the egg and beat well.
- With the mixer on low speed, gradually add the flour mixture and beat just until combined.
- Fold in the cherries and chocolate chips.
- Drop the dough by tablespoons 2 inches apart onto a large baking sheet coated with cooking spray.
- Bake at 350°F for 12 minutes or just until set.
- Remove the cookies from the oven. After they cool on the pan for five minutes, transfer the cookies to a wire rack and let them cool completely before serving.
