Herb-Coated Halibut
Yield: 4 servings
Ingredients:
- 4 thick halibut filets, 7 ounces each
- 1 teaspoon lemon zest
- 4 tablespoons chopped Italian parsley
- 4 tablespoons chopped cilantro
- 2 tablespoons extra virgin olive oil
- 4 tablespoons chopped mint
- ½ teaspoon freshly ground black pepper
- ½ teaspoon kosher salt
Directions:
- Drizzle olive oil into small sauté pan.
- Combine the lemon zest, parsley, cilantro, mint, and pepper.
- Coat the halibut in herb mixture. Allow to rest at room temperature for 15 minutes.
- Season with salt. Drizzle with oil.
- Sear halibut.
- Place halibut in oven at 350°F for 5 to 7 minutes.
- Set aside and cover with foil until serving.
