Recipes: Herb-Coated Halibut

Herb-Coated Halibut

Yield: 4 servings

Ingredients:

  • 4 thick halibut filets, 7 ounces each
  • 1 teaspoon lemon zest
  • 4 tablespoons chopped Italian parsley
  • 4 tablespoons chopped cilantro
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons chopped mint
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon kosher salt

Directions:

    1. Drizzle olive oil into small sauté pan.
    2. Combine the lemon zest, parsley, cilantro, mint, and pepper.
    3. Coat the halibut in herb mixture. Allow to rest at room temperature for 15 minutes.
    4. Season with salt. Drizzle with oil.
    5. Sear halibut.
    6. Place halibut in oven at 350°F for 5 to 7 minutes.
    7. Set aside and cover with foil until serving.
