Recipes: Blueberry Crumble

Blueberry Crumble

Yield: 6 servings

Ingredients for Filling

  • 6 cups fresh or frozen blueberries
  • 1/2 cup lightly packed brown sugar
  • 3 tablespoons flour
  • 2 teaspoons lemon juice

Ingredients for Topping

  • 3/4 cup rolled oats (not instant or quick cooking)
  • 1/2 cup all-purpose white flour
  • 1/4 cup whole wheat flour
  • 1/2 cup dark brown sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons cold, unsalted butter, cut into small pieces

Preparation of Filling

  1. Place the blueberries in a large bowl.
  2. Add sugar and flour.
  3. Place the mixture in an 8-inch square baking dish and sprinkle with lemon juice.

Preparation of Topping

  1. In a large bowl, combine oats, white and whole wheat flours, sugar, and cinnamon. Blend together using your hands or a fork.
  2. Work in the butter using a fork or the tips of your fingers until it is evenly distributed.
  3. Sprinkle the topping evenly over the filling.

Bake the crumble at 375° for 30 minutes until the fruit is bubbling and the topping is lightly browned. Let it sit 20 minutes and serve warm.
